1990's
The chapter on the 90's was underwhelming. Seven pages and three recipes, none of which held any appeal to me. I suppose Pork Loin with Peach Salsa might be okay, Cod with Lentils I knew would be a fail with the family. Maybe I should have braved it a bit because I was pretty blown away by the 80's.
Never-the-less...at the end of our 80's meal Jeremy and I were discussing what foods we remember being faddish in the 90's. We remember Bagel Pizza's and Totinos Pizza Rolls. But maybe that's because that's what college aged people ate. At any rate, Jeremy said I should fix Three-Cheese Enchiladas which was his most frequently requested meal during our early years together. I decided to serve it with a Spinach Salad with candied pecans.
I also read that people using flowers in their food presentation was a big thing and I remembered that I used fresh rose petals on my wedding cake! (Okay, so I didn't do it myself, but that's what I requested).
My wedding cake is still the favorite part of my wedding.
So why not for dessert we have the cake and punch we had at our wedding! We WERE married in the 1990's. So for dessert we had White Texas Sheet Cake and Almond Punch
The Three-Cheese Enchilada's are meatless and probably why they were such a hit with Jeremy. I realize that I left the stems on the spinach. I could tell you I do that because the stems are packed with nutrients so I leave them on for health reasons. The truth is I'm lazy and despise taking stems off spinach. A little stem never killed anyone. The salad also had goat cheese. I was actually surprised that Ana really liked the salad and ate a fair amount.
I had forgotten how much I loved this cake. It's actually meant to be a sheet cake. (Hence the title), but my Aunt fiddled with the recipe to make it be able to function as a typical wedding cake. I have no memory of eating the cake that day so I don't know how the adaptations actually worked (although I have photo proof I ate it). This cake also tastes really fantastic as breakfast the next day. Or the day after that. I can't tell you about the third day for breakfast...there wasn't any left to try. I actually think it gets better the longer it sits.
Almond Punch...can't go wrong fusing almond flavor with boatload of sugar and ginger ale. I actually had so much almond syrup left I"m using it to make Italian Iced Soda's...which I might like more than the punch itself.
So that's where the cookbook leaves us. (It was written mid 90's). I told the kids that was the end of our cooking trip through the decades and Ryan said "Get out the internet and keep cooking!!" and they all agreed they wanted to keep doing this. So, I guess the question for you is do you want me to head back to twenties and cook up to the point I started blogging about it?
Either way, thank you for joining us in this journey. I really only started blogging for my mom and my friend and so to have all your encouraging words as well really makes my day 😁
